Cape gooseberry tart!


Cape gooseberries - "physalis peruviana" makse a wonderful tart - both sour and sweet with a great flavour.

Prepare your standard pate sable pastry crust ( par cooked). Add a good quantity of fresh gooseberries, a little brown sugar and a spoonful of ginger powder.

Prepare the frangipani butter, sugar, ground almonds, eggs, a little vanilla and if you like, some extra nuts for flavour and texture. Spoon on the frangipani to the tart and bake in a moderate oven for about an hour.

A slice of warm tart with a scoop of homemade vanilla!!

Rhubarb Crumble @ AriyasomVilla

After a wait of nearly a year - Doi Khum finally came up with the goods - Rhubarb.

Rhubarb, brown sugar, ginger cooked of lightly for a few minutes and then put into individual ramekins.

Flour, brown sugar, oats, ginger and butter - rubbed together and heaped on top of the rhubarb - cook in the oven for about 30 minutes until the crumble is just turning golden brown.
Serve with vanilla custard and or vanilla ice cream. Just wonderful!

BANQUETING @ ARIYASOMVILLA





Since opening the hotel we have been handling a number of private parties and banquets. Recently, we hosted a prominent Ladies club AGM followed by heir luncheon. This was followed by a pre-wedding dinner and then over the weekend we catered to an SME hosted seminar.

Apple crumble @ AriyasomVilla


We produce quite a number of home made deserts - but of all - the apple crumble is possibly our most popular.

Green apples - cut, peeled and cored
Raisins, currents & candid orange peel
Unsalted butter
Cinnamon
Crystal brown sugar

Put in a large pan and slowly cook over a low heat. Cook for about 15 - 20 minutes until the apples just start to go soft. Put the apple mixture into individual ramekins or a larger bowl.

In a large mixing bowl add soft flower, crystal brown sugar, butter, pinch of salt and cinnamon. Rub the butter into the flour until you have a crumbly biscuity mixture.

Top the ramekin / bowl with plenty of crumble mixture and bake in the oven - about 20 - 30 minutes.

Serve with vanilla ice cream and or creme Anglais. A great way to complete a meal!

Cookies@AriyasomVilla


For functions we often make home made cookies. Very easy to make but so much better than those from the supermarket.

I use organic self raising flour from Waitrose - combine with oatmeal, brown sugar, salt, a small amount of baking powder, chocolate chips, raisins or cranberries, nuts ( macadamia or almonds or cashew) - combine thoroughly. Gently melt the butter, a spoonful of golden syrup - add to the dry mixture and lastly beaten eggs. Mix thoroughly.

Spoon out on to a baking tray in small balls and bake in the oven for 12 - 15 minutes. Cool on a wire tray until cool and crispy.
Great with a cup tea!
