Flooding in Bangkok

FLOODING IN BANGKOK! The flooding situation in Bangkok has been documented by most international media organizations. However, these reports are often dramatized and rather superficial.

We should start of by saying that the North - Chiang Mai, Chiang Rai etc are all fine is the South - Phuket, Samui & Krabi. The area effected by the waters is basically just north of Bangkok itself - Ayuthaya, Pathum Thani, Rangsit, Don Muang etc.

The large volumes of water threatened to pour into central Bangkok. However, this threat has significantly receded. There is still water there but it is reducing and the City and Government authorities are making progress with reducing water levels.

Since mid October central Bangkok has remained dry and life has remained normal - all our transport service BTS, MRT, buses etc have operated as usual. Despite some initial concerns, supplies of all food and beverages has proceeded as normal.

The main tourist spots - Grand Palace, Wat Poh, Jim Thompson House etc have remained open. It's just too easy for the international media to right us of but Bangkok is still here and" open for business as usual"!

Bread & Butter Pudding@AriyasomVilla

Bread and butter pudding is an English classic simple to make but not simplistic! I normally prepare it in a deep glass dish. Remove the crusts fro 9 pieces of bread ( stale is fine) butter gerously. Lay the 1st 3 pcs on the bottom of the dish - sprinkle with raisins, candid orange peel and honey, repeat another layer of buttered bread and more raisins and honey. Final layer of bread and butter and honey.

In a s/s bowl beat 5 eggs and set aside - in a small pan add milk, cream and cardamons bring to the boil and leave to infuse for 15 mins. Pass the milk / cream through a sieve to remove the cardamon over the beaten eggs and combine with a little vanilla. Pour the mixture over the bread.

Place the dish in a bain marie and cover with foil bake in a medium oven for about 1 hour - remove the foil and let the top brown. The pudding will rise quite dramatically - looks and smells wonderful.

Cape gooseberry tart!


Cape gooseberries - "physalis peruviana" makse a wonderful tart - both sour and sweet with a great flavour.

Prepare your standard pate sable pastry crust ( par cooked). Add a good quantity of fresh gooseberries, a little brown sugar and a spoonful of ginger powder.

Prepare the frangipani butter, sugar, ground almonds, eggs, a little vanilla and if you like, some extra nuts for flavour and texture. Spoon on the frangipani to the tart and bake in a moderate oven for about an hour.

A slice of warm tart with a scoop of homemade vanilla!!

Rhubarb Crumble @ AriyasomVilla

After a wait of nearly a year - Doi Khum finally came up with the goods - Rhubarb.

Rhubarb, brown sugar, ginger cooked of lightly for a few minutes and then put into individual ramekins.

Flour, brown sugar, oats, ginger and butter - rubbed together and heaped on top of the rhubarb - cook in the oven for about 30 minutes until the crumble is just turning golden brown.
Serve with vanilla custard and or vanilla ice cream. Just wonderful!

Apple crumble @ AriyasomVilla


We produce quite a number of home made deserts - but of all - the apple crumble is possibly our most popular.

Green apples - cut, peeled and cored
Raisins, currents & candid orange peel
Unsalted butter
Cinnamon
Crystal brown sugar

Put in a large pan and slowly cook over a low heat. Cook for about 15 - 20 minutes until the apples just start to go soft. Put the apple mixture into individual ramekins or a larger bowl.

In a large mixing bowl add soft flower, crystal brown sugar, butter, pinch of salt and cinnamon. Rub the butter into the flour until you have a crumbly biscuity mixture.

Top the ramekin / bowl with plenty of crumble mixture and bake in the oven - about 20 - 30 minutes.

Serve with vanilla ice cream and or creme Anglais. A great way to complete a meal!

Cookies@AriyasomVilla


For functions we often make home made cookies. Very easy to make but so much better than those from the supermarket.

I use organic self raising flour from Waitrose - combine with oatmeal, brown sugar, salt, a small amount of baking powder, chocolate chips, raisins or cranberries, nuts ( macadamia or almonds or cashew) - combine thoroughly. Gently melt the butter, a spoonful of golden syrup - add to the dry mixture and lastly beaten eggs. Mix thoroughly.

Spoon out on to a baking tray in small balls and bake in the oven for 12 - 15 minutes. Cool on a wire tray until cool and crispy.
Great with a cup tea!
